Ivan Ralston is the chef at TUJU. Born in São Paulo in 1985, he comes from a family deeply connected to food: his parents, Roberto and Liane Bielawski, are founders and partners of the highly successful brand Ráscal. Although he has a college background in Music, at the age of 20 Ralston decided that he wanted to cook. He spent two years at the restaurant Maní, in São Paulo, and then moved to Spain, where he worked at renowned houses such as El Celler de Can Rocca and Mugaritz – both awarded with Michelin stars. He also did a culinary internship at Tokyo’s RyuGin before returning to Brazil and finally opening his own restaurant, Tuju, in 2014.
