A native from the city of Birigui, in the state of São Paulo, Adiu Bastos is the sommelier at TUJU. Adiu says that he always had a weak spot for the wine world. His career as a sommelier, however, began by chance, while he was teaching Philosophy. In spite of his passion for grapes and vineyards, it would take a push from a friend to finally get him to switch for a job at the field of reds and whites. For the TUJU wine list, Bastos assembled a selection of bottles focused on natural, organic and biodynamic labels. These make up around 80 per cent of the restaurant’s offerings. “It’s a pleasure to introduce new things, wines customers are not used to seeing and tasting.” Bastos is also responsible for the craft beer list, which emphasizes small breweries from São Paulo so that the unpasteurized craft beverages arrive as fresh as possible at TUJU’s tables.
